Gluten-Free Waffles

Ingredients

  • 2/3 cup rice flour
  • 1/3 cup cornstarch
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/2 cup applesauce
  • 2 tablespoons oil
  • 2 eggs, separated

Instructions

  1. Beat egg whites until stiff.
  2. In a separate bowl combine dry ingredients and mix well.  
  3. Add the remaining ingredients, except egg whites.
  4. Beat until smooth.
  5. Fold in egg whites.  
  6. Bake in a hot waffle iron, following the manufacturers directions.
  7. Variations:
  8. Add about ½ cup berries or other chopped fruit.
