Ingredients
- 2/3 cup rice flour
- 1/3 cup cornstarch
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup milk
- 1/2 cup applesauce
- 2 tablespoons oil
- 2 eggs, separated
Instructions
- Beat egg whites until stiff.
- In a separate bowl combine dry ingredients and mix well.
- Add the remaining ingredients, except egg whites.
- Beat until smooth.
- Fold in egg whites.
- Bake in a hot waffle iron, following the manufacturers directions.
- Variations:
- Add about ½ cup berries or other chopped fruit.
