Santa Fe Beans and Rice (Gluten-Free)

Cuisine: Gluten-Free

Yield: 10 servings

Ingredients

  • 3 cups prepared brown rice
  • 1 – 15 ounce can black beans, rinsed and drained
  • 1 cup frozen corn
  • 1 cup diced zucchini
  • 1 – 10 ounce can of diced tomatoes or 1-1/2 cups fresh diced tomatoes
  • 1 cup salsa
  • 1 cup sour cream
  • 1 cup cheddar cheese
  • tortilla chips

Instructions

  1. Preheat oven to 350.
  2. Combine all the ingredients in a large bowl. Transfer to a greased 2 quart baking dish and bake uncovered for 30 minutes. Serve warm with tortilla chips.
