Santa Fe Beans and Rice (Gluten-Free)
- 3 cups prepared brown rice
- 1 – 15 ounce can black beans, rinsed and drained
- 1 cup frozen corn
- 1 cup diced zucchini
- 1 – 10 ounce can of diced tomatoes or 1-1/2 cups fresh diced tomatoes
- 1 cup salsa
- 1 cup sour cream
- 1 cup cheddar cheese
- tortilla chips
- Preheat oven to 350.
- Combine all the ingredients in a large bowl. Transfer to a greased 2 quart baking dish and bake uncovered for 30 minutes. Serve warm with tortilla chips.
