1 cup canned Pumpkin
1 teaspoons ground cinnamon
1 teaspoons ground nutmeg
1 teaspoons salt
1 teaspoons vanilla
1/2 cup vegetable oil
3/4 cup brown sugar
5 cups rolled oats
3/4 cup dried cranberries or raisins
Preheat oven to 325 degrees Fahrenheit.
In a large bowl, combine Pumpkin, cinnamon, nutmeg, salt, vanilla, vegetable oil, and brown sugar. Add rolled oats and stir until evenly covered with pumpkin mixture. Evenly spread the mixture onto a large baking sheet.
Bake one hour, taking the pan out every 20 minutes to stir. Repeat twice for a total of 60 minutes baking time. If granola still seems a little moist, return to the oven for an additional 10 minutes. When finished baking, allow the granola to cool. Stir in dried cranberries or raisins and store in an airtight container.
