- 2 tablespoons vegetable oil
- 1/2 cup masa, cornflour, or Gluten-Free Flour Mix
- 1/4 cup cornmeal
- 1/2 cup milk
- 1/3 cup sugar
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 2 cups frozen corn
- Preheat oven to 350 degrees. Grease an 8 inch square baking pan.
- Mix all ingredients together, except corn, until smooth.
- Stir in corn.
- Pour into baking pan. Cover and bake 30 minutes or until set.
- Serve warm by scooping out with a spoon. Great as a side dish with Mexican food.
