Corn Cake

Ingredients

  • 2 tablespoons vegetable oil
  • 1/2 cup masa, cornflour, or Gluten-Free Flour Mix
  • 1/4 cup cornmeal
  • 1/2 cup milk
  • 1/3 cup sugar
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups frozen corn

Instructions

  1. Preheat oven to 350 degrees. Grease an 8 inch square baking pan.
  2. Mix all ingredients together, except corn, until smooth.
  3. Stir in corn.
  4. Pour into baking pan. Cover and bake 30 minutes or until set.
  5. Serve warm by scooping out with a spoon. Great as a side dish with Mexican food.
