Coconut Custard Frosting

Ingredients

  • 1 cup evaporated milk
  • 1 cup sugar
  • 3 egg yolks, beaten
  • 1 teaspoon vanilla
  • 1-1/3 cups flaked coconut
  • 1 cup chopped roasted pecans (optional)

Instructions

  1. In a small saucepan, mix milk and sugar together.
  2. Add beaten egg yolks and vanilla.
  3. Bring to a boil over medium heat, stirring constantly with a wire whisk. Boil for two minutes. Remove from heat and stir in coconut and pecans if desired.
  4. Spread over cake while the frosting is still warm.
