Gluten-Free Basic Muffins

Servings: 1 dozen muffins


  • 2 cups Gluten-Free Flour Mix
  • 1/3 cup sugar
  • 1 Tablespoon baking powder
  • 1 teaspoon salt
  • 1/3 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup milk


  1. Preheat oven to 350 F and grease or line a muffin pan.
  2. Combine all the dry ingredients and set aside.
  3. Beat oil, eggs, vanilla and milk together.
  4. Add to the dry ingredients and mix just until smooth.
  5. Fill muffin cups 2/3 full and bake 20 minutes.


Variations: Add 1/2 cup of your favorite fruit or nuts to the batter before baking. Top with cinnamon and sugar or streusel.
